Cake bites for a wedding

I decided to make cake bites for my friend's wedding reception (which was last weekend) since they're probably the easiest and cheapest thing when hundreds are needed. A week before the wedding I was told I only needed to make enough for 200 people, I was so relieved!! (Initially I thought I needed to make enough for 400-500 people)

I used my mini cookie scoop to make uniform pieces, then shaped them into squares. I made almost 400, which was only 4 boxes of cake mix.

I used candy melts instead of real chocolate so I didn't have to temper it. I was trying to make this as easy as possible for me. I'm pregnant in my first trimester and feeling quite crappy currently.

I used white candy melts to pipe on an "L" for their last name





To keep that trays from smashing down on the chocolates, i used these paper cups as spacers.

Those are totally cute! Very nice piping - I hate the way I make a capital L, it's so ugly.

hi junko, i'm not sure exactly how long they took. i baked a couple cakes on thursday night, then worked on it on and off on friday, then finished up on saturday morning. i'm guessing maybe it would have taken 10 hours if i had done it straight through.

wow! that's still a lot!! I didn't get to try any coz we bounced right after the ceremony - too crowded! I once tried (miserably) to make your cake balls, so I tried those mini-cupcakes that lady did originally but with brownie. It kept shape a lot better and i'm much more partial to brownie than cake (eating it, anyway!)

hi anonymous, i just shaped them into balls to made sure there were no cracks, then shaped them with my fingers to make squares. I started dipping them with a fork but half way through just started dipping them with my fingers. they weren't perfect, you could see the imperfections if you looked on the bottom side. but some had long drippings, i just let them harden and then broke them off before i put them into the paper liners.

ohh..a hundred thanks to you! they look beautiful! no imperfections seen with the cut edges or the drippings. hand dipping would have been easier with the item so small. did u use a square liner too? i haven't seen any in stores. your baby must be almost 2 yrs old now :) what brand chocolate do you see. mine condenses no matter what..also no glossy texture like urs :( i keep running to the microwave to keep it smooth flowing. i feel like i am making hundreds of mistakes. any help would be appreciated. thank you so much.

I use regular round mini liners, they just look square because they conform to the shape of the cake bite. Since I had to make a lot of these, I just candy melts instead of real chocolate, that's why they looked so glossy and it's easy to work with. But i definitely prefer real chocolate.
