mini chocolate cupcakes


I made mini chocolate cupcakes for a friend's daughter's 1st birthday party last Sunday. The party's theme was Cat in the Hat. I've not read the book but i knew the colors were red and white with blue. I couldn't think of anything creative or great, so i just used red stars. now that i went to the party, i have a good idea. i could have made faces on the cupcakes with blue icing for crazy blue hair for the "things" or whatever they are called. next time...

Man, those babies went fast! I didn't even get to try one! :( I bet some greedy little kids took a bunch! haha Thanks again for all your help! Good thing you came early (even by accident) coz you saved our lives! :) Let me know if I can ever return the favor!

hmmmm not sure kim. do you have a theme or color for the party? i would just copy that over to the cupcakes. flowers are always pretty on cupcakes. and also nowadays you can get really cute mini (or regular sized) cupcake liners-different colors and designs are available which make the cupcakes look really cute.

Actually, I was looking more for tips on baking time, temperature, etc. I haven't made mini-cupcakes before and I'm not sure how it differs from full-size cupcakes. :)

oooooooooh. for these cupcakes, i used the boxed cake mix-i forgot which brand-i bought whatever was on sale. i used my mini scooper (2 tsp) to make them uniform in size and i believe i baked them for 11 minutes.
