- 1 egg
- 3/4 cup packed dark brown sugar
- 1 tablespoon butter, melted
- 1 teaspoon vanilla extract
- 2/3 cup chopped pecans

I have to get my sugar fix from things other than chocolate, because for some strange reason now that I am pregnant, I don't crave for chocolate anymore...sad, I know. It's ok, and I'll still eat it, but before pregnancy, I had to fight myself to not eat it with every meal and snack.

Hmm...I have a ready-made pie crust sitting in the fridge and I didn't know what to do with it. I think I'll try this recipe out! Thanks!
When I was finally able to eat these were so yummy. tasted just like the big pecan pie. And having the minis didn't make me feel guilty as if I ate a whole pie! hahah.
